Yellowtail with Fennel, Pear, Cucumber, Mint & Brown Rice

The mint and anise notes from the fennel are combined with pear, mint and cucumber to compliment the delicate white fish. Dicing the fennel and other ingredients provide a crunch for an interesting contrast against the fish.

Ingredients (serves 1)
Fennel - 1 bulb, diced
1/4 english cucumber - diced
1/4 pear - diced
Handful of mint - chopped
1 tsp of Apple Cider Vinegar
Salt, Black Pepper
substitutes: Apple for pear, Celery for Cucumber, Dill for Mint
Australian Yellowtail - 6oz. (sub with Halibut, Tilapia, Haddock, Cod, etc.)
1/2 cup Brown rice
Steps
Dice all ingredients, toss with apple cider vinegar, salt, black pepper and set aside in refrigerator.
Fish:
Prepare fish via preferred method. In this recipe, we baked/air fried the fish for 10 minutes at 425 degrees.
Rice:
Prepare rice via preferred method
