2 herbs, 2 cheeses to pair with this fresh summer salad with zesty microgreens or watercress and watermelon. The delicate greens require very little dressing, and the hazelnut provides volume and a contrast to the tangy and tart flavors throughout the dish.
Ingredients
Watercress or Microgreens 2-4oz
Watermelon - 1/2 cup - seedless, diced
Hazelnut (toasted/roasted if available) - handful
Goat cheese - 2 oz
shaved or grated Pecorino - 2 oz
Mint - handful - chopped
Basil - handful - chopped
Finishing Salt (optional) (himalayan, pink salt)
Black pepper
Dressing
Aged Balsamic (15+yrs) - 1 Tsp
Honey - 1/2 Tsp
Salt - 1/2 Tsp
Steps
For cress and microgreens salads, avoid overdressing or dressing too early. Best case is dressing the salad directly on the serving plate, and allow the eater to mix it around themselves.
Simply add all the ingredients separately to a bowl or plate, then drizzle the dressing, black pepper, and finishing salt as required. Drizzle more honey if looking for a sweeter salad.
