A bright and briny condiment, with fresh ingredients that can be served with bread or as an accompaniment to vegetables or fish.
Ingredients (makes 1 small bowl)
1 medium sized tomato, roma, hothouse, or heirloom.
1 handful of fresh italian parsley
3 kalamata/black olives (remove pits)
1 Tbsp capers
3 Tbsp olive oil
1 Tsp salt
black pepper
Optional - pinch of fresh thyme
Optional - Fresh onions or garlic. Chile peppers
Optional - Sherry vinegar
Optional - smoked paprika

Rough chop all of the solid ingredients on a cutting board, nearly to a pulp.
Add to a bowl, then add salt, black pepper and olive oil to taste.
Adjust if required by adding more tomatoes or herbs.
