Sweet Potato & Relish

Sweet and mellow base with a smoky, herbal and acidic condiment that's easy to whip up is a perfect compliment to any entree. The sweet potatoes can be prepared on the grill, broiled, baked, or pan seared. Just make sure they're not sliced too thick if using the pan sear or the broiler to ensure that they cook and soften. Alternatively, the sweet potatoes can be baked whole, which will take much longer.



Ingredients (Serves 1)

1 large or medium sweet potato, (sliced into quarter inch circles).

Olive Oil

Salt

Black Pepper


Relish (keep refrigerated after 2 hours)

Small package of fresh mint (.5 oz)

2 pearl onions - diced (or 1/4 of a small yellow onion).

1/4 small red bell pepper

1 Tsp smoked paprika (paprika can be subbed).

2 Tbsp olive oil

2 Tbsp lemon juice

salt to taste



Steps

Slice the sweet potatoes into small circles (1/4 inch). rub them with olive oil or some kind of oil spray.

Prepare a grill (careful that the potatoes don't fall through the grates) to medium heat , cook on each side for about 7 minutes, be careful not to char too much. If some of the circles are burning too quickly, move to a part of the grill without flame or wrap in aluminum foil.


Relish:

Simply mince the mint, and incorporate the rest of the ingredients, including the diced pepper and onions. Add to a bowl and add olive oil and lemon and salt to taste.
