Step up your avocado toast game with earthy, tart, and rich sun-dried tomatoes.
Ingredients (serves 2)
2 Slices of Toasted Bread
5 oz of sun-dried tomatoes - 3 Tbsp
1 Avocado
2 Tbsp of Pine nuts - Raw is fine, but toasted pine nuts adds more flavor
Black Pepper
Kosher or finishing salt
1 Tsp Olive Oil
Optional: Sweet Paprika
Steps
Sun-dried tomatoes usually come in 2 forms, dred and vacuum sealed or stores in olive oil.
If using the variety without oil, you'll want to rehydrate them for 30mins in warm water. Then, finely chop them, add to a bowl, mix in olive oil, salt, black pepper and paprika (optional).
For the oil conserved tomatoes, just remove from the liquid, chop,add pepper, paprika (optional). Check the salt level and add if under-salted.
Toast bread to your liking
Slice avocado (split the avocado in half, remove the pit safely, cut strips down through the avocado and spoon them out.
Smear the sun-dried tomato paste on the bread
Add pine nuts - if toasting, add to a medium-heated saute pan for 3 minutes, stirring around and making sure not to burn.
add avocado slices and finishing salt.
Add more olive oil if desired.
