Sun-dried Tomato Avocado Toast

Step up your avocado toast game with earthy, tart, and rich sun-dried tomatoes.



Ingredients (serves 2)

2 Slices of Toasted Bread

5 oz of sun-dried tomatoes - 3 Tbsp

1 Avocado

2 Tbsp of Pine nuts - Raw is fine, but toasted pine nuts adds more flavor

Black Pepper

Kosher or finishing salt

1 Tsp Olive Oil

Optional: Sweet Paprika


Steps

  • Sun-dried tomatoes usually come in 2 forms, dred and vacuum sealed or stores in olive oil.

  • If using the variety without oil, you'll want to rehydrate them for 30mins in warm water. Then, finely chop them, add to a bowl, mix in olive oil, salt, black pepper and paprika (optional).

  • For the oil conserved tomatoes, just remove from the liquid, chop,add pepper, paprika (optional). Check the salt level and add if under-salted.

  • Toast bread to your liking

  • Slice avocado (split the avocado in half, remove the pit safely, cut strips down through the avocado and spoon them out.

  • Smear the sun-dried tomato paste on the bread

  • Add pine nuts - if toasting, add to a medium-heated saute pan for 3 minutes, stirring around and making sure not to burn.

  • add avocado slices and finishing salt.

  • Add more olive oil if desired.
