Cherry Balsamic & Grilled Peach Salad


Spruce up your picnic table with a fruit forward salad, powered by a cherry balsamic vinaigrette. Grilled peaches and fresh strawberries combined with fresh quality lettuce star in this recipe. Pairs well with lean steak or lamb chops, skin on chicken or pasta.





Ingredients (Serves 2)

microgreens - 2oz

Leaf Lettuce - 4oz


Strawberries - 3 medium sized- sliced thin

Grilled Fresh Peach - 1/2 peach Sliced and then grilled - Other option is fresh sliced, or caramelized in butter and brown sugar.

Candied pecans - handful

Flaxseed - sprinkle


Vinaigrette

1/4 Cup Olive Oil

2 Tbsp Aged Balsamic Vinegar (at least 12 yrs)

1 Tsp - Cherry flavored balsamic or handful of cherries. ( it is better to use more of the high quality balsamic and only add a small amount of the flavored vinegar, which is usually low quality).

Salt/Black Pepper

1 clove Garlic/Shallots- minced (Optional)

flavorings (Raspberry, Cherry, Orange)


Vinaigrette Steps

If using fresh cherries, combine all the vinaigrette ingredients in a food processor or blender and blend until fully pureed. Add a touch of water if too thick. The dressing should be thick enough to stick on a spoon, but also be able to flow.

If using only using cherry flavored vinegar along with the balsamic, just whisk or use your shaker to emulsify. Add water if the oil and vinegar isn't combining.


Salad Steps

Always dress the greens right before serving to avoid over saturating them. Add a little at a time to the greens and toss, then add in fruits and nuts.
