Steak Salad with Zesty Dressing

A good way to use up leftover steak while getting greens into your system. The dressing, similar to a traditional thousand island is sweet and peppery, which pairs well with the meat and thicker lettuce. Heads up, this salad requires a knife.



Ingredients (serves 1)

Steak (off the grill or left over and refrigerated - sliced into 1/4 inch slices. - Flank, Flatiron, Sirloin, Filet, Trip Tip or Hanger are recommend.


Romaine Lettuce or Leaf Lettuce mix- 4oz

Micro Arugula or Arugula - 2oz

Goat Cheese or Feta cheese - 1 or 2 oz

Cherry Tomatoes - 3-4 sliced in quarters

Optional: Onion, Cucumber - julienned and sliced.



Dressing (for 2 servings)

Ingredients:

1/4 Cup Olive Oil 1 Tbsp Lemon Juice 1 Tbsp Honey 1 Tbsp Dijon Mustard 1 Tbsp Mayo 1 Tsp Hot Sauce Salt + Black Pepper



Steps

Whether preparing the steak fresh or using leftover, once cooled, cut into 1/4 inch slices.

Toss all the greens, cheese, tomatoes and vegetables in a mixing bowl with 1 Tbsp of dressing.

Add the greens and vegetables to a serving bowl, place the steak slices on top or to the side of the salad.

Add additional (1 Tbsp) dressing directly on top of the meat. Feel free to add finishing salt and black pepper to the salad and steak.
