3 Ingredients and 2 pans to prepare a quick, high fiber meal that can accompany larger proteins. Feel free to add spice and your favorite vegetables.
Ingredients (Serves 2)
Brown Rice
Broccolini - 6 stalks (trim the bottoms and chop in 2 inch pieces)
1 large yellow squash - sliced into 1/8 inch thick half moons
Olive Oil
Salt
Black Pepper
Garlic Powder
optional: Red chili flakes or cayenne
Lemon
Steps
Cook the brown rice via preferred method
Prepare a skillet/pan (with lid) to saute the squash and broccoli
On medium high heat - add 1 Tbsp of olive oil, then the broccolini. Stir it around to make sure all sides are heated.
Add another Tbsp of olive oil and add the squash to the broccoli. Continue stirring, add more olive oil as needed as the squash tends to soak it up.
Add spices and continue stirring
The squash will be fork tender when finished, but it the process is taking too long you can add water/lemon to shallow boil or create steam (works best with a lid on the skillet)
Serve with Rice
