Getting a bit into the season with wonderful warming spices that provide a base in a tahini and yogurt dressing. Paired with napa cabbage, cucumber, microgreens, this salad is nutrition packed. Add chicken, mushroom, tofu and make it your own.
Ingredients (serves 2)
Napa cabbage - 1/2 head- shredded
1 carrot. - shredded/shaved
1/2 cucumber - shaved
Microgreens - 2oz
pumpkin seeds or any nut variety- handful
or Portobello Mushroom
Dressing
Depending on the tahini, you may have to add water. Most tahini jars include the sesame paste with some oil.
2 Tbsp of tahini
1 Tbsp of yogurt
2 Tbsp lemon juice
1 Tbsp warm water
1 Tbsp allspice
1 Tsp cardamom
1 Tsp ginger powder
1 Tsp salt
1 Tsp crushed black pepper
whisk in olive oil - 3 Tbsp, also add water if you want to thin it out.
