One of the most flavorful fish found in the mediterranean, sea bream, is paired with grilled heirloom carrots that are tossed in allspice, ginger, paprika and ground cloves. Sea bream is a slightly sweet and delicate fish, which is complimented by the sweetness in the carrots. Substitute tilapia, snapper, barramundi, grouper.
There are multiply ways to prepare fish, pan-searing , shallow fry, baking, broiling or grilling. Since sea-bream is delicate we chose to bake , but on the grill, with a little olive oil. However, baking directly on the grill grates would be a nightmare, so place the fish on top of a lightly oiled (unbleached) parchment paper in an aluminum foil pan. This is easy cleanup, too.
Ingredients (serves 1)
Sea Bream filet - 4-6oz
Season with salt pepper, olive oil, and any of your favorite all purpose seasoning mix (usually onion powder, garlic powder, dehydrated peppers).
5-6 heirloom carrots (peeled) (if too thick, slice them in half to cook faster)
tossed in ground allspice, cloves, garlic powder, ginger, cardamom,paprika, salt and olive oil.
Broccolini - 3-4 stems
Salt, Black Pepper, Garlic powder, Olive oil.
Yogurt
4 Tbsp of full fat greek yogurt
1 tsp of cumin
fresh mint or dill
Steps
The carrots and fish will cook on the grill for approximately the same time.
Add the carrots to a grill set to medium-high heat- direct flame.
Also place the pan with the fish on the grill, direct heat but on medium low flame.
Rotate the carrots to char on each side (after 5 minutes).
Add the broccolini to the grill. the florets will char in 5 minutes, but if the stems are still hard, move to indirect heat for another 5 minutes.
Check the fish, once cooked, it will turn white and firm (7-12 minutes).
Plate everything together, add the yogurt to the carrots if desired. Top the fish with lemon if desired.
