Salmon & Cannellini Beans with Dill

We were delighted on how well this combination worked! Dill and salmon is of course, a classic pairing, but combining a fatty fish with cannellini beans adds a nourishing texture. Finally, the celery, onion, garlic and dill brings that herbal and bright quality.
**We've prepared this combination both separately and in the same "pot" in the past.

Ingredients (For 2)
2 salmon filets (Atlantic, Steelhead Trout works, too)
Spice rub for Salmon - Olive oil, Salt, Black Pepper, Onion Powder, Dehydrated peppers
15oz /1 can of cooked Cannellini Beans (white kidney beans) - sub Lima, great northern beans.
1/4 celery stalk - diced
1/2 small onion - diced
1 clove garlic - minced
Fresh Dill- a handful - chopped
Olive Oil
Lemon
Salt
Cracked Black Pepper
Steps (Beans only)
In a skillet , sweat onions, garlic and celery in olive oil, salt and black pepper, over medium heat. Remember to add oil just before you add ingredients to the hot pan.
Sweat until the onions are translucent(not caramelized) about 5-7 minutes, adding oil if the ingredients start to burn or stick to the pan.
Add the cannellini beans to the skillet, use some of the reserved canning liquid if using a can, add 1/2 cup water.
Add dill
Stir around and let reduce for 5-7 more minutes. Keep covered or set aside in a bowl and cover before serving.
Salmon (separate)
One of our favorite methods of cooking Atlantic salmon is broiling (in a small aluminum foil pan), but you could also bake, or grill.
If broiling, set the salmon under the broiler set to medium on the highest rack. Broil for about 7 minutes with the oven door slightly ajar (to stop the temperature censor from turning off the heating element)
Broil for another 5 minutes with the oven door closed, which will allow the fish to bake. (Cooks to medium doneness)
Ideally, you'll have a decent crust and the fish will be cooked to medium. Add more time to the closed door broiling for medium-well or well done.
Alternatively, you can bake the salmon in the middle rack for 10-15 minutes at 375 degrees.
Serve together, top with olive oil and lemon and black pepper.
Combining Salmon and Beans method
For this approach, we use the already cooked beans mixture with the salmon.
First, In a baking dish (enamel cast iron, aluminum pan, or foil pan) bake the salmon for 7 minutes at 375 degrees. This will cook most of the salmon to avoid mixing the raw fish with the beans.
Add the beans to the baking dish, add olive oil.
Move the salmon to the broiler (set to medium on the highest rack) for 7 more minutes.
This will char the celery, onions a bit, which adds some nice flavor.
Top with black pepper, lemon, olive oil.
