We would ask our Grandma for this soup on a nearly daily basis as kids. Super simple, tomato and orzo based. The starch and constant stirring of the orzo provides a nice silky texture. You can definitely do this soup "up", but we bet the original version is good enough, just use good orzo! Sub in vegetable broth for the chicken broth if desired.
Ingredients (makes 3 bowls)
3 cups/24 oz chicken broth (or veggie broth)
1 cup/8oz water
1/3 cup orzo - preferably "miskos brand" (see below) - do not rinse
1 Tsp Salt
6 oz - Tomato Paste (sub in tomato puree but account for the increased water content)
Steps (total about 40 minutes)
Bring the liquids up to a slow boil, add tomato once warm. (add some of the liquid to the tomato container to help get all of the goodness out)
Once at a boil, add salt, orzo and stir. Leave the pot uncovered, and continue to boil at medium heat.
Keep stirring , note that the orzo may stick to the bottom of the pot, which is ok.
After 15 minutes, cover the pot and set it to medium low/simmer, keep stirring.
After 10 more minutes, the soup should have reduced about 25%, and the orzo is no longer translucent and has doubled in size.
Serve!
