Quick and healthy meal combining quinoa to add texture to scrambled eggs. Really high in iron, feel free to change the ratios , adding more quinoa for a filling version.
Ingredients (Serves 1)
1/4 cup quinoa - cooked
2 eggs
1/2 cup spinach
Salt
Black Pepper
Olive Oil / Butter
Accompaniments : Parsley, Chives, Hot Sauce, Sriracha, Pesto
Steps
Rinse Quinoa in cold water, strain thoroughly. Add 1/2 cup of quinoa to 1 cup of salted water in a saucepan and bring to a rapid boil. Once boiling, reduce to a simmer and cover until all of the liquid has evaporated away.
Separately, in a non stick pan, saute spinach with olive oil and/or butter, salt , black pepper, in a non stick pan. Immediately add the 1/4 cup quinoa. Once the leaves start to wilt, add 2 beaten eggs to the pan. Stir continuously to avoid sticking, work them into a scramble and serve, Top with salt and black pepper or other accompaniments.
