A nutritiously supercharged meal, sweet n tangy pomegranate reduction and tahini coat all the ingredients in this customizable bowl that covers your protein, veggie and carb needs. Follow the instructions in the post for the individual elements. This recipe was created as a way to extend some leftovers, and can be eaten hot, cold or room temp.

Ingredients (serves 2)
chicken (1 breast - 6oz)

Toppings
currants - handful
cucumber - 1oz - diced
pistachios - handful - crushed or halved
radish - 1 - chopped
red bell pepper - 1/4 - diced
Optional: pickled red nion
Grains
couscous - 1/2 cup pearl couscous or fine grain couscous
Prepare couscous per box/package instructions, usually boiled and strained or boiled like rice.
Greens - You can either go fresh with microgreens or spinach, or use sauted , steamed or grilled broccolini, spinach, kale or broccoli.
Dressing
Pomegranate syrup or pomegranate juice - 8oz
You can find store bought pomegranate syrup, or just take a 1/2 cup of pomegranate juice, and set to medium heat in a saucepan and let reduce until thickened. Add a touch of lemon and honey.
