Mushrooms & Spinach over Freekeh

Nourishing recipe for the mushroom lovers out there!



Ingredients

1 cup freekeh

2 cups fresh spinach

8oz baby bella mushrooms - sliced

Make sure the mushrooms are dry before sauteing

1 clove garlic - minced

Olive Oil

Lemon

Salt

Black pepper

Dried Rosemary



Steps

Freekeh:

Boil Freekeh in salted water, 15-20 minutes until tender.

Strain and set aside.


Spinach:

Warm up a skillet/pan, on medium heat

Add olive oil, then the sliced mushrooms, and stir them around

Add Salt, Rosemary, Black pepper, minced garlic continue stirring (5 minutes)

Add spinach, which may require more olive oil so it doesn't stick. You could also add water and cover the skillet to generate steam to help cook down the spinach.

Add the freekeh to skillet before serving, mix around, top with lemon.
