Moroccan Spiced Chicken , Freekeh & Lentils

Loaded with deep aromatics, this spice rub is a hit with chicken. Combined with earthy lentils and freekeh, this is a flavorful yet nutritious dish.




Ingredients (For 2)

1/2 cup Freekeh

1/2 cup french green lentils

2 Chicken Breasts or Thighs

3 leaves fresh mint - Chopped

Olive Oil, Lemon

Rub/Spices

1 tsp Cumin

1 tsp Paprika

1/2 tsp Cinnamon

1/2 tsp Ginger

1/2 tsp ground cloves

1/2 tsp ground green cardamom

1/2 tsp salt

1/2 tsp cayenne (optional for heat)


Steps

In a bowl, blend spices, (grind any whole spices)

Pat dry the chicken breast and rub generously with the spice blend, let sit for at least 2 hours (refrigerated) for maximum flavors.


Boil the freekeh in salted water

After 10 minutes- add green lentils to the freekeh and boil for 15 more minutes until the lentils are fork tender.

Strain and set aside.

Once cooled, add chopped mint, lemon and 1 tsp of olive oil and toss.


Cook the chicken per your favorite method, this run works best with a grill (add olive oil) or seared on a cast iron.


Serve this with a cool yogurt, olive oil and lemon condiment.
