Middle Eastern Spiced Chicken

A staple middle eastern chicken rub sure to make your top 10 list. This includes a number of spices, that aren't all required to come up with a tasty outcome, but don't skip the turmeric! This can be used as a quick wet-rub or a marinade, and works with any part from the chicken. It is best prepared over live fire, grilled/charcoal grilled. We love to serve this with a Tahini sauce, or a tomato/cumin based hot sauce.


For 2 medium sized chicken breasts:


Prepare a marinade in your preferred receptacle , ziploc, tupper ware, etc. and marinade for up to 24hours. You can also prepare a yogurt marinade , just reduce the avocado oil and remove any chunks/excess before grilling.


Ingredients (in importance)

1/4 cup Avocado Oil

6 Tbsp Turmeric

1 Lemon - juiced

1/2 Lime - Juiced

2 Tbsp Salt

4 Tbsp ground Sage

1/2 tsp celery salt

1 Tsp White Pepper

2 Tbsp ground coriander

1 garlic clove chopped (or 1 Tsp garlic powder)

1/4 yellow onion - minced or pureed (or 1 Tbsp onion powder)

1 Tsp Ginger

1/2 Tsp Cumin

1 Tsp Cardamom

1 Tsp Nutmeg

1/2 Tsp allspice

1/4 Tsp Cloves (ground)

Optional:

2-3 Bay Leaves

Chopped Mint, or Cilantro
