This recipe can't be called Fattoush since it's missing the crunchy Pita Bread, but it is a take on the delicious, bright, mint and citrus forward salad. This salad can be made without the tart sumac spice, but then what's the point?!
There are many ingredients you can incorporate into this salad, the most important aspect is the bright citrus, mint and sumac tingle in each bite.
Makes 2 servings
Dressing
This is not a dressing heavy salad, and depending on the lettuce used, you may want to add the liquids slowly. If setting aside and not eating immediately, refrain from adding the dressing as the acidity can break down the other ingredients. Also, you can squeeze lemon or lime for some extra acidity.
2 Tbsp Olive Oil, 1/4 Lemon Juice, 1/4 Lime Juice, 1 Tbsp Sumac, Salt (Dried Mint optional)
Salad Ingredients
Rough Chopped Romaine 1 1/2 Stalks (You can mix in a few varieties, like Boston lettuce and even cabbage)
Mint, whole leaves or chopped. Don't hold back!
Parsley - This is optional, but can extend the mint if you are running short.
Chopped 1/2 large Cucumber
Chopped Tomato (1 Medium sized)
Sliced Red Onion - 1/2 large (pickled can be used)
2 Tbsp Sumac (top and mix while adding more)
Squeeze of Lemon and Lime juice
Possible Additions: Cabbage, Radish, Pita Chips, Peppers (Anaheim), Chives/Green Onions, Pomegranate Molasses (are often used in authentic dressings), Avocado, Olives
