Farro, Sweet Potato and Tahini

A source of carbs and fiber that works as a standalone meal, or as an accompaniment to a heavier entree. Farro and sesame based tahini provides a nutty base that compliments the richness of the sweet potato.


Prepare Tahini separately:


Ingredients (serves 2)

1 cup Farro

1 large sweet potato (chopped into 1/2 inch triangles)

Optional: Chopped garlic



Steps

There are many ways to prepare sweet potatoes, but for a simple option, you can boil the sweet potato and farro together in salted weather. Farro holds its shape even when cooked for a long time, so it's a pretty safe method to boil it until the sweet potato is fork tender.


Add 1 cup of farro to salted water, boil for 10 minutes

Add the chopped sweet potato, stir, continue to boil for 10-15 minutes or until sweet potato is fork tender and breaking apart. Avoid overcooking the sweet potato as they'll disintegrate.


Set aside to cool, and serve with tahini dressing. Top with salt and black pepper as needed.
