Curry Chicken Cabbage Salad

Nothing more refreshing than a crunchy cabbage salad. In this case, Napa cabbage is accompanied by deliciously flavored chicken, mint and a curry powder based yogurt. Flexible enough to substitute in any vegetables for the chicken.



Ingredients

1/2 a Napa cabbage (chopped / julienned )

1/2 a package of fresh mint

1 fresno chile pepper - sliced into circles (high spice level, substitute with red bell pepper).


Optional accompaniments:

Chives

Cucumber

Sweet Potato


The chicken is prepared separately, and leftovers can be used.

A classic tandoori spice mix would go best, but follow our links below for some variations that will work in the salad :

Dressing Ingredients:

4 Tbsp Yogurt

2 Tbsp Mayo

2 Tbsp Olive Oil

1/4 Lemon juice

1 Tbsp Curry Powder

1 Tsp Salt

Dash of Dried Cilantro (not readily available)

1 Tsp DriedMajoram



Steps

Cut the chicken into cubes (1/2 inch).

the chicken can be refrigerated, or fresh and hot..


Simply add all the ingredients and chicken into a large mixing bowl, add the dressing and toss.
