Couscous with Honey & Pistachio

One of our favorite go-to ingredients is couscous, super simple to prepare and flexible to many flavors and preparations. This is a playful experiment that turned out well. Couscous, being durum or semolina wheat holds up to sweet flavors and nutty, and here we've combined both. This can accompany a rich meat dish, like lamb or middle eastern spiced meatballs.


Ingredients (serves 2)

Fine grained couscous- 1 cup

2 tbsp Honey

handful of crushed pistachios


Optional:

Dried Fruits like apricot, raisin, cherries.


Steps

Prepare couscous per instructions. Usually these call for a ratio of 1 to 1 , grain to water where the water is salted and brought to a boil in a small sauce pan, then add the couscous, stir, turn off heat and cover with a lid to let cook and steam (10 minutes). Fluff with a fork.


Once the couscous has been fluffed and is closer to room temperature, toss with pistachio nuts, and honey. Serve.
