Chopped Romanie, Fennel, Parsley and Carrot Salad

An herb forward chopped salad bolstered by carrots and licorice-aromatic fennel brings the potassium and vitamin c. This mix can stand up to just a squeeze of lemon and vinegar, or a sweeter dressing.



Ingredients (for 2)

  • 2 Heads of Romaine - Finely chopped

  • 1/2 English Cucumber (skinned / chopped in semi circles)

  • Handful of Parsley - finely chopped

  • 1 Carrot - thinly sliced

  • 1/2 Fennel Bulb- julienned/sliced

  • 1 tsp Salt (cucumber and parsley need it)

  • 1 tsp Black Pepper

  • Optional: Chives, Green Onion, Onions, Mint, or Dill, or Basil

  • Optional Fruit: Green Apples


Dressing

We recommend lightly dressing this salad..

  • 1/4 Cup Olive Oil

  • 2 Tbsp Lemon Juice

  • 1 Tbsp Apple Cider or Champagne Vinegar

  • Salt/Black Pepper

  • optional (1/2 tsp of sugar)
