Chimichurri


A condiment for herb lovers that can pair with almost everything. Versatile and flexible, we encourage you to adjust and add your favorites, or just whip together whatever you had. The core of this Argentinian condiment is olive oil, red wine vinegar and a combination of herbs, but the essence is texture of the finely chopping ingredients!




This is a hard recipe to measure, but you can find your taste as you add to the mix. Our advice is, add more herbs, and more olive oil than you would expect.


Ingredients

  • Cilantro - Handful (remove stems) 70%

  • Flat Leaf Parsley- Half a handful - 30%

  • 1/4 of a small onion - diced

  • 1/4 cup Olive Oil (high end olive oil may be overpowering)

  • 1 Tbsp Red Wine Vinegar

  • 1/4 Red Bell Pepper - Diced (substitute for fresno chiles if you want more spice)

  • Pinch of Dried Oregano

  • 1/4 Lemon

  • 1 clove of garlic - minced (substitute with shallots)

  • Sea Salt 1 tsp

  • Optional: 1/2 roma tomato - diced (core removed)

  • Optional: Fresh oregano, but very small amounts as it can become bitter.



** Often times we still make chimichurri if we're missing ingredients like peppers, onions, garlic and tomatoes..



Steps

  • Finely chop the onion, pepper, garlic (with salt), and add to a bowl

  • On the same board if possible, finely chop the parsley and cilantro, almost to a paste for best results. Add to onions and peppers.

  • Add dried oregano (pinch between your fingers) to the bowl, and mix.

  • Add the Red Wine Vinegar and then slowly add the Olive Oil while stirring and tasting.

  • Finally, add diced tomato, lemon and more salt to your liking. Tomatoes can water down the chimichurri.

  • The consistency should be a thick herb/onion mix where the oil doesn't run. Blend again before serving to incorporate the oil into the herbs.

  • Poultry, Steak, Potatoes, Farro, White fish

  • Asparagus, Mushrooms, Yucca, Cauliflower, Squash, Zucchini

  • Green Onion Champagne - green onions cilantro parsley tomato Champagne vinegar lemon olive oil salt pepper oregano

  • Smoked Paprika & Sherry - Diced tomato, smoked paprika, fresh thyme, oregano, lemon, olive oil, sherry vinegar
