Chicken with Spinach & Feta

Rich, tangy and a decent way to eat some greens. Feta and Spinach is a classic combo. This recipe can be prepared in a variety of ways, but our favorite is using one skillet to pan-sear the chicken thighs and then cook the spinach in those juices. We recommend imported feta, and fresh bunch spinach, not baby spinach. Feel free to add other ingredients that pair well with feta and spinach like leeks, zucchini, artichokes, or potatoes. You can serve with potatoes, or orzo / rice.



Ingredients (Serves 2)

4 chicken thighs

  • 1 tsp Dried Rosemary

  • 1 tsp Dried Oregano

  • 1 tsp Dried Thyme

  • 1 tsp Dried Sage powder

  • Black Pepper

  • Salt (careful with the salt as the feta will impart a lot depending on the brine)

  • 1 tsp Garlic Powder

  • Olive Oil

6-8 oz Spinach

3 oz Feta cheese - imported is best, crumble before adding to skillet.

Optional: Garlic - minced

Olive or Avocado Oil

1/4 Lemon



Steps

The preferred method is to pan-sear the chicken and spinach in one pan/skillet.

Prep the chicken with the spices and seasonings mentioned above.


  • Start a skillet on medium heat, and when at temperature, add avocado oil the pan and immediately add the chicken (using the cold start pan-sear method).

  • Allow to cook and brown, 8-10 mins, adding more avocado oil before turning over the chicken.

  • After 8 more minutes, add the spinach, and a few drops of water (white wine can be used as well) to help wilt down the spinach. Stir and blend together.

  • (Optional: add minced garlic)

  • Turn the heat down to medium

  • Add crumbled feta to the pan, and the lemon juice. stir until it started to melt. Different brands of feta will melt differently.

  • The spinach and feta should release water, but if it's not melting, add more liquid via lemon juice or water.

  • Remove from heat when the dish looks like creamed spinach The leftover liquid will thicken once it cools down.


* Feel free to adjust the amount of spinach and cheese if you want a healthier version.

* This spinach and feta mixture can be prepared separately to already cooked chicken.
