Chicken w/ Lentils, Spinach and Freekeh

A power meal after a grueling workout, high in fiber, protein and iron balanced with carbs. Simple to put together and can be changed out with almost any protein.

Ingredients (Serves 2)
2 Chicken Breasts (cooked separately)
1/2 cup Freekeh
1/2 cup green lentils (petite french recommended https://www.bobsredmill.com/petite-french-green-lentils.html)
6-8oz fresh spinach or baby spinach
1 clove of garlic - chopped
Olive Oil
Salt
Black Pepper
Steps

In a medium sized stock pot, boil the 1/2 cup of freekeh in salted water. (2 cups of water or more.)
After 10 minutes, add 1/2 cup of lentils to the freekeh. Cook until the lentils are fork tender, but not falling apart. Should take around 15-20 minutes depending on the variety of lentil. The freekeh should be ready, and tends to stay firm even when overcooked. Strain and set aside in a bowl.
Saute the spinach in a large (10-12 inch) non stick pan, with olive oil, salt, black pepper and the chopped garlic. Work the spinach around so it starts wilting, add a few spoons of water to help break it down. Add lentils and freekeh to the spinach
Serve with the chicken! And as always, add lemon :)
Substitutes
Sub chicken with Pork, Oily white fish like Halibut or even mushrooms.
