A mediterranean and Persian influenced take on the chicken salad, well spiced and using a lemon tahini dressing in place of the classic mayonnaise. As with any dish throwing a variety of ingredients together, feel free to add and substitute your favorites. A chicken salad is a great way to extend already prepared chicken breast, preferably, middle eastern spiced and served cold.:
Ingredients (serves 2)
Already cooked chicken breast (2) - shredded
Tahini Dressing https://www.lemonpantry.com/post/lemon-tahini-sauce
1 Tbsp - Olive Oil
Celery - diced - about 2 Tbsp
Pistachios - handful (lightly crushed/crumbled)
1 Tbsp Sumac
1 Tsp Honey
Lemon Juice - for finishing
Optional:
Pomegranate Seeds (optional) (1/4 pomegranate)
Yogurt or Mayonnaise
Cucumber
Chives
Steps
Take already prepared chicken breast- and shred, with a fork, or hands or chop with a knife. Set aside in a large bowl.
Lightly crush pistachio nuts
If using fresh fruit, Remove pomegranate seeds by cutting a pomegranate into quarters and placing in a bowl of water. Remove seeds by hand. Watch out for stains!
In the large bowl, add the dry ingredients, honey and tahini dressing and toss. Add sumac to the mixture.
Add lemon and salt as needed.
Serve as is, or add to pita bread (and tomato, cucumber, onions)
