Chicken, Cherry Tomatoes & Gnocchi by Jason

A tasty submission from the talented home chef Jason P., this recipe is sure to hit all of the spots, with delicious chicken paired with gnocchi and cherry tomatoes. The gnocchi is boiled, then sauteed to accentuate the deliciousness in every bite.



Ingredients (serves 2)

1 cup gnocchi

4 Chicken breast tenders

Cherry tomatoes - 1 handfull

Garlic Salt

Black Pepper

Parsley, handful- chopped finely

Freshly Grated Parmesan

Squeeze of Lemon


Steps

In this version, the chicken is prepared separately from the gnocchi.


  • Dry rub the chicken with garlic salt, black pepper, olive oil. Throw on the grill!

  • Boil the gnocchi for 3-4 minutes, or until floating. Strain, rinse with cold water then set aside.

  • In a large non-stick pan, saute the cherry tomatoes with olive oil on high heat.

  • Once charring develops on the tomatoes, add the gnocchi and continue to stir, browning the gnocchi. 3-5 mins total

  • Season with Garlic salt, parsley, a squeeze of lemon and top with freshly grated parmesan.

  • Serve with the chicken breast tenders.
