Carrot & Radish Salad

The focus of this post is the shaved carrot and radish salad, with bright and briny seasonings and dressing. High on the nourishment scale, and pairs well with a light entree like fish or vegetables.




Ingredients (serves 2)

3 Large carrots

2 radishes

2 Tbsp Capers

1 tsp caper juice

1 tsp apple cider vinegar

1 tsp lemon

1 Tbsp olive oil

Optional: 1/2 tsp of sugar

Black Pepper

Salt

Parsley - handful - chopped

Steps

Shave the carrots with a peeler or the large hole part of a cheese grater. Set in a bowl and dry with a paper towel.

Slice the radishes (into half moons or strips) - add to carrots

Add the chopped parsley

Add capers and liquid ingredients and mix. (add slowly and test)

Season with salt, black pepper
