Fairly simple, just combining a bunch of super healthy greens and beans and topping with lemon and high quality olive oil.
Ingredients (serves 2)
1 bushel of broccolini
6 oz of cannellini or lima beans (already cooked)
2 cloves of chopped garlic
your favorite greens:
Dandelion, Spinach, Mustard, Collard, Rapini, Kale
Add any other essential stock- ingredients
Carrots, Celery, Leeks, Dill
Steps
Boil all of the ingredients in salted water together for 20-30 minutes.
Reserve 1 cup of leftover liquid, strain, set aside in a platter or bowl to cool, then add copious amounts of olive oil, lemon, and salt. Add any of the reserved liquid.
