Nothing fancy here, just lentils with some zip from feta.
Ingredients (Serves 1)
1/2 cup black lentils
Garlic - 1/2 clove - minced
2 oz feta - imported (substitute any soft cheese like ricotta)
parsley - chopped
Salt
Black Pepper
Olive Oil
Water/Broth
Optional: fresh onion or picked red onions.
Optional: lemon juice
Steps
Boil the lentils in salted water with chopped garlic, or broth for 20-25 minutes / until fork tender. Be careful not to overcook or else they'll get mushy.
Strain and set aside to cool.
Once at room temperature, add feta, olive oil, parsley, salt and black pepper.
Optional: add pickled red onion.
