Balsamic Veggie Stir Fry

Not a fancy dish, but easy to prepare. It has elements of a veggie fried rice with a healthy focus. The rice is prepared separately which makes the dish quick to whip up. The stars of this dish are the red bell peppers and spinach.




Ingredients

1 cup rice (prepared with your preferred method) - Any short or long grain brown or white rice should work. Jasmin and traditional Basmati varietals may not.

1 Tbsp Balsamic

Salt

Black Pepper

Olive or Avocado Oil


Base Vegetables

2 cups spinach

1/2 red bell pepper - chopped

1/2 clove of garlic - diced

1/2 medium onion - chopped


Optional Vegetables

1 large portobello mushroom - chopped

Asparagus - chopped

Green onion - chopped

Black olives - diced




Steps

Prepare the rice separately and set aside.


  • Prepare a saute pan or non stick skillet by placing it under medium-high heat.

  • Starting with the chopped vegetables, add 1 to 2 Tbsp of olive oil to the pan, then quickly add the red bell pepper, onions and optional mushrooms or asparagus. add Salt and Black Pepper

  • After about 5 minutes, add the garlic and spinach, adding more olive oil if needed.

  • Turn the heat down to medium, cook for another 3-5 minutes or until the spinach is slightly wilted

  • Incorporate the rice, add more olive oil if it's too clumpy

  • Add the 1 Tbsp balsamic vinegar, mix, and set aside for serving.

  • * If using olives, add along with the spinach
