Arugula Feta Pistachio Salad

Peppery arugula is paired with feta, and sweetened with sundried tomatoes and honey in this citrus based salad. Be careful not to overdress.

Ingredients (serves 2)
Arugula 5oz
feta- 4oz - crumbled or grated (substitute with parmesan, pecorino, goat, manchego)
Sun Dried Tomato - handful - chopped
Pistachios - handful - crushed
Dressing
3 Tbsp olive oil
1/4 lemon
1 Tsp Honey
Black Pepper
Salt
Whisk together, add a touch of water to emulsify if needed.
Steps
Crumble the cheese, add crushed pistachios, and chopped sundried tomatoes to a serving bowl.
Add vinaigrette , and toss.
Add arugula in 2 portions, continue to toss , making sure the accompaniments sitting at the bottom of the bowl is incorporated.
